One pot Sausage rice pilaf

This easy pilaf is made quickly in the instant pot. 





Ingredients 

2 c. uncooked rice, rinsed and drained
4 c. minus 2 T. water
2 precooked Bourbon sausages
1 large carrot
1 large onion
2 oz. canned roasted red bell peppers 
2 T. butter
2 bullion cubes 
Few fresh sage leaves, chopped, or 1/8 tsp dried sage 
Pinch of Seasoning salt of choice 
Salt and Pepper to taste 

Directions

Dice onion and carrot. In instant pot, sauté in butter until softened, about 3 minutes. Dice sausages. Add remaining ingredients and cook on rice setting. When done cooking, Let warm 5 minutes in pot, then release pressure. Remove lid and toss gently with a rice paddle.  Then put back lid and let sit again for another 5 minutes. Serve warm.
