AIP Turkey Tenderloin & Curried Cauliflower Couscous




Curried Cauliflower Couscous

1 head cauliflower cut into florets 
1 red onion roughly chopped
2 stalks celery chopped
1 green onion chopped

Seasoning:
2 t. Salt
1 rounded t. Curry powder
1 t. Cumin 
1 t. Dry mustard powder
1/2 t. Paprika 
Freshly ground black pepper to taste
1 whole dried red pepper



Pulse cauliflower florets in food processor until the size of rice grains or couscous. Sauté in preheated Instant Pot Pressure Cooker on sauté setting, in 2 T. coconut oil for about 5 minutes until heated through and coated with oil. Set aside in large bowl. Sauté onion in remaining oil for about 1 minute. Add celery and sauté until onions are soft, about 2 minutes. Add to bowl with cauliflower. Add seasoning and mix roughly. In Instant Pot add 1 cup water, insert steam basket, and spoon mixture into steam basket. Steam under pressure for about 5 minutes. Quick release pressure and spoon couscous into serving bowl. Keep warm until served. 

Some notes:
Seasoning could use another go, not quite the right balance... 

One way is to just do plain couscous with salt and stir fry in ghee. 

I'll have to work on a better flavor balance...



Turkey Tenderloins 

2 turkey tenderloins
1 T. coconut oil
1 t. Rubbed sage
Salt and Pepper to taste
1 c. water

Gravy
1/2 c. cooking sake or white cooking wine, or substitute water plus 1 T. Apple cider vinegar 
1 t. salt
1/2 t. white pepper
pinch rubbed sage or thyme
2 t. tapioca starch or thickener of choice


Rinse 2 turkey tenderloins and pat dry. Season with salt, pepper, and rubbed sage or thyme. Sauté in preheated Instant Pot Pressure Cooker on sauté setting with coconut oil until well-browned on both sides.  Add 1 cup water. Pressure cook in poultry setting for 12 minutes. Quick release pressure. Set aside on serving platter. Add wine, thickener and seasonings into pot and simmer while stirring continuously at least one minute. 

Serve turkey with gravy immediately. 



Broccoli Al Dente 

This method cooks broccoli perfectly!

Steam rinsed florets of 1 large broccoli crown in Instant Pot Pressure Cooker for 2 minutes, in steam basket over 1 cup water. Quick release pressure and immediately plunge steam basket of broccoli into pot of cool water, to stop cooking. Serve with egg-free mayonnaise or dressing of your choice.
