Quick Green Rice - Vegan Complete Protein

Today I decided to cook one of my favorite side dishes - as the main meal!  Green rice is stupid-easy to cook, and tastes delicious.  Using a pressure cooker will shave off about 10 minutes or so, keeping start-to-finish in under 30 minutes!






Ingredients

One 16 oz. can Garbanzo Beans, rinsed
1 go White Rice of any type, rinsed until rinsewater is clear
2 go water
juice of 1/2 lime
1/2 jar Herdez Salsa Verde
1 T. coconut oil
1 vegetable bullion cube
1/2 t. dried oregano leaves
2 T. chopped cilantro (or substitute parsley)
1 stalk celery chopped (optional)

Put all ingredients in rice cooker except for cilantro.  Cook in rice cooker until done, about 20-25 minutes.  Or steam in pressure cooker on white rice setting (10 minutes) and release pressure.  Let set 5 minutes undisturbed in rice cooker on warm, add cilantro, then fluff (like gently tossing a salad) with the rice paddle or fork, cover and let sit another 5 minutes.  Serve with sliced avocado and a wedge of lime.  Keep rice warmed in rice cooker throughout the meal, then cover in airtight container and refrigerate (use within 1 day) or freeze.  

A healthier, less-quick version of this dish is to rinse and pre-soak uncooked garbanzo beans and rice, in clean springwater, at least six hours.  For example, set the rice and beans to soak in the water in the morning.  When you return in the evening from work, dump the rinswater, give the rice and beans a final rinse, and continue with the recipe.

Serves 2.

A go is the clear plastic cup that usually comes with your rice cooker when you buy it, and is about 3/4 c. or roughly 6 ounces.
