Cranberry Tart

 

 

 

 

 

 

 

Ingredients 

1 pack fresh cranberries
2 mandarins zested and wedges chopped (or zest and chopped flesh of 1 orange) 
2 packs dried cherries
1/2 c brown sugar 
1/4 c maple syrup (or honey) 
2 T corn starch or other flour
Pinch salt
2 T butter (or vegan margarine) 

Preheat oven to 425 degrees F. Toss ingredients and place in uncooked pie shell. Turn down oven to 350 F and bake for 1 hour or until center bubbles and crust is golden brown. Let stand to cool. Serve warm, standalone or with ice cream.
