Turkey Breast, Sausage and Rice Pilaf

 
 

 

 

 

Season turkey on all sides with light sprinkling of salt, pepper and poultry seasoning. In Instant Pot on sauté mode, brown sausage and turkey breast on all sides in 1 T oil (butter or vegan margarine or coconut oil) and set aside. Chop and sauté in Instant Pot an onion, two stalks celery, and a bell pepper in 2 T butter or vegan margarine or coconut oil. Add 2 c. water and cook on high pressure for 35 minutes for a 3.5 lb breast. Let pressure naturally release for 10 minutes, release pressure. 

Take 1 c. broth from Instant Pot and in soup pot boil with 1 c. Minute Rice Multi Grain rice for 10 minutes. 

Slice turkey and sausage, plate over rice, and ladle 3 or 4 T of vegetables and soup over plate. Serve warm.
