Weeknight Cheating Chicken Dinner
This meal is so easy it feels like cheating!

Thinly sliced chicken breast in your favorite creamy dressing makes this meal effortless. Thinly shaved zucchini zoodles need nothing more than a vegetable peeler and skillet. Minute rice wild rice cooks up in broth and feels like cheating!
Wild Rice *
Cook 1 cup minute rice wild rice in 1 cup broth and 1 t. butter or coconut oil or vegan margarine. Toss to fluff rice (don’t push it, gently lift to stir). Let sit.

Cheater’s Super Moist Quick Chicken
1 Chicken breast thinly sliced filet
4 T. Favorite creamy dressing, or dressing below:
Dressing Recipe
4 T. Coconut yogurt (or coconut milk or creamer)
Plus any one or more optional add-ins:
- Pinch black or white ground pepper
- Pinch onion powder
- Juice 1/2 lime or lemon or apple cider vinegar
- 1/2 T. chopped fresh herbs (any such as parsley, cilantro, rosemary, thyme, tarragon) or Pinch dried herb blends such as Italian or Provençal herbs
Rinse chicken breast and pat dry. Coat in dressing and set aside. Heat grill to 350 F and spray with coconut oil. Grill 3 minutes per side. Slice in strips. Serve warm.
Grilled Sweet Bell Pepper
Wash, seed and slice 1 sweet bell pepper. Spray grill with coconut oil spray. Grill 5 minutes on grill just after grilling chicken, so that bell pepper absorbs some of the chicken flavors.
Zoodles
1 medium zucchini
Pinch salt
1 t. butter or EVO or vegan margarine (your choice)
Scrape zucchini lengthwise with tones of a fork to score skin. Slice flesh of zucchini lengthwise in thin ribbons down to seedy core. Discard seedy core. Sauté zoodles in your choice of fat 3 minutes, tossing in skillet until heated through. Serve immediately.
Timing Ideas
Chicken can be prepped in sauce to marinate in fridge. Rice can be started next to sit and continue to absorb moisture and firm up. Keep covered in cooking pan or rice cooker to keep warm. While rice is cooking, prep zucchini, Cook chicken, then peppers. Then cook zucchini while peppers are grilling, and serve.
