Hashed Sweet Potatoes

Yummy Sweet Potatoes 



Radioactive, a rapper and DJ inspired this recipe at Wrongs of Summer where he cooked for the gang of maybe 50 folks or so. Today I made delicious hashed sweet potatoes with the same ingredients but a different process. Here are the steps. 

Ingredients 

One very large sweet potato, peeled and julienned to make about 3 cups
1 onion grated 
2 Tbsp. Coconut oil
1 Tbsp. Raisins soaked and chopped 

Spices: a pinch or two of each spice to taste *
Cinnamon (maybe 2 pinches)
Nutmeg 
Turmeric 
Cumin 
Cayenne Pepper
Ground Black Pepper 

* a pinch is about 1/8 tsp. 

Salt to taste 
1 Tbsp. brown sugar 
2 Tbsp. vegan margarine cut into cubes 

Instructions 

Warm 1/2 Tbsp. oil in 12” iron skillet. Add onion and spices and sauté for 1 minute. Lift from pan with large spatula or spoon. Add remaining oil. Add potatoes. Put spice mix and raisins on top of potatoes. Salt to taste. Turn up heat to medium and let potatoes become golden on one side. Turn potatoes and let become golden on the other side. Continue to occasionally turn potatoes in pan until cooked through and soft, about 10 minutes — Don’t let potatoes burn. Dot top of potatoes with margarine cubes and sprinkle brown sugar on top. Turn down heat to warm, place lid on potatoes, and let butter and brown sugar melt into potatoes, about 1 or 2 minutes. Serve warm.
