Instant Poule-au-Pot



This is a quick twist on this classic dish. 

1 boneless skinless chicken breast 
3 T butter 
3 T apple cider vinegar 

To taste:
Salt
Pepper 
Celery salt
Onion powder
New Mex. Chili powder 
Dried oregano 
Ginger powder 
Onion powder 
Sprig of fresh rosemary 

1 c. water
1 doz. baby tri-color potatoes cut in half or quarters
1/2 bag frozen peas 

1 container plain coconut yogurt 

In instant pot:

Sauté chicken in butter both sides until brown but still raw inside chicken. Deglaze pan with vinegar. 

Add remaining ingredients except peas and yoghurt, and pressure cook 10 minutes. Add peas and pressure cook 1 more minute. 

After pressure releases, stir in yogurt. 

Serve hot.
