Avocado stuffed with Tuna Salad





Mix:
1 can tuna in water 
1 chopped vine ripened tomato 
2 T apple cider vinegar and/or juice of 1/2 lemon
1 T EVO
1/2 t coconut aminos 
1 thick slice of red onion, coarsely chopped
1 T fresh herbs snipped finely with scissors or chopped (oregano, mint, basil, thyme, etc.)
6 kalamata olives pitted and coarsely chopped 
1/4 t ground cumin (optional)
1/4 t dried oregano (optional) 
2 T crumbled goat or feta cheese (optional) 
Salt to taste
Ground pepper to taste

Halve and pit 2 avocados and place on a plate. Spoon tuna salad into avocado halves. Garnish with more freshly ground pepper and fresh herbs if you like. 

Serve with a spoon to scoop avocado with salad right out of the avocado shell.
