Vegan Parfait

This scrumptious fruit parfait is so easy to make. No one will even miss real whipped cream in this dessert, as coconut whipped cream is the secret that steals the show. 





Ingredients 

1 can 8oz Coconut cream, well chilled 
1/2 t. real vanilla to taste
2 T. sugar, to taste 
1 packet fresh blueberries (6 oz) chilled
1 packet fresh raspberries (6 oz) chilled
1 ripe peach, chilled
2 T. cherry jam, or berry jam of your choice


Open pre-chilled can and drain coconut water, keeping the solid chilled coconut cream to use. Make sure the cream is chilled solid - or else put back cream into refrigerator to continue to chill until it is solid.  Chilling is the key to whipping the coconut cream to stiff peaks. In a large mixing bowl, combine solid chilled coconut cream with vanilla and sugar. Whip with electric mixer until cream forms soft peaks. This could take several minutes. Chill in refrigerator until firm, about 1 to 2 hours, or up to 8 hours ahead. Chill serving glasses at the same time (optional).  The soft peaks will now be more stiff. 

Up to about 1 hour before serving, prep the parfaits as follows: 

Peel peach and slice into wedges. In small bowl, coat peach slices in 1 t. sugar (optional.) Set sugared peach slices aside to chill for no more than 5 to 10 minutes or until slices are softened to taste. Any longer and the sugar might over-soften the peach slices. The riper the peach, the less sugar setting time is needed. 

Rinse and drain berries. In another medium sized mixing bowl, stir jam with 1/2 t. water until smooth. Gently fold in berries until coated with jam. 

Layer in serving glasses, one dollop whipped cream, a couple spoonfuls of berries, one more dollop of cream and another couple spoonfuls of berries. Top with 2 or 3 peach wedges. Garnish with mint leaves if desired. Serve immediately, or prep just before a meal, then serve chilled as dessert.
